Pan Fried Chicken


Todays Dish will be Pan Fried Chicken served with Chicken Jus, Oven dried tomatoes, Roasted Pumpkin and Spinach Risotto. And for the 1st time, my plating can be said of fine dining portioning =D finally i made something small haha

So anyways to get to the Recipe to create this creation dish,

Starting up,

The Pan Fried Chicken
- Season Chicken with salt & pepper and for this case, i used orange juice which made a sweet effect on the chicken
- layer a pan with oil on the fire, place chicken on the pan and brown both sides till its cooked

Chicken Jus
- Oven roast chicken bones till brown in color
- Sweat onions, garlic, celery & carrots with butter in a pot
- put in the roast chicken bones into the pot and fill the pot up with water till its covering the chicken bones
- place to boil for more than 30 minutes to get the full flavor
- drain the jus from the pot
- in a separate pan, make a rouge by adding butter and flour till its creamy
- mix a little rouge into the jus till it thickens a little

Spinach Rissoto
- put onions, carrots and spinach into a pan with butter over fire
- add the risotto and add a little chicken stock and water slowly
- stir constantly until cooked

Roasted Pumpkin
- drizzle oil onto a roasting pan, place pumpkin, onions, and salt & pepper into it
- Roast in oven until pumpkin is soft

Oven Dried Tomatoes
- cut tomatoes into slices and place onto roasting pan
- sprinkle salt and place in oven until tomatoes are dried

You can also substitute risotto with pasta and change the vegetables like this:
